The simple mention of the word Souffle gets us going. The souffle is so versatile and can carry many flavors but none is as classic as the Ultimate Lemon Souffle. This souffle recipe fits in with so many menus and tastes, it is both fancy and yet so easy to prepare as an everyday dessert.
Finish off your souffle with a little confectioners sugar over the top and serve with a few, plump berries for a treat that's at once visually spectacular and amazingly simple.
2 tbsp butter
¾ cup sugar
2 tbsp flour
1 large lemon
3 egg yolks
3 egg whites
1 can evaporated milk
Cream butter, sugar, and flour together
Add grated rind and juice of a whole lemon
Add well-beaten egg yolks and milk
Whip egg whites stiffly and fold into mix
3 egg yolks
Place mixture in a large bread dish
Place this dish in a larger dish with hot water
Bake in slow oven of 300 degrees for 1½ hours or until lightly browned
With heavy crème mix or cool whip
