1 1/2 Cups of King Arthur All Purpose Flour
1 Cup high quality sugar
1 Tsp. baking powder
2 Tbsp. zested lemon rind
1/2 Tsp. salt
1/2 Cup chopped pecans
1/2 Cup of milk
6 Tbsp. good quality cooking oil of choice
2 eggs beaten
In a large mixing bowl, combine the flour and sugar, then mix in the salt and baking powder being sure to get these ingredients mixed well.
Add the zested lemon rind and again, mix well.
Finally, add in the chopped pecans, oil, milk, and eggs and mix until smooth. A little extra time mixing is a good idea to provide a light and fluffy taste.
Pour the mix into a lightly oiled and floured bread pan and bake at 350 degrees for 45 minutes.
Set a kitchen timer for 20 minutes to monitor and then do the same at 15-minute intervals.
Prepare the juice from one lemon combined with 1/2 a cup of sugar. When the top is nicely browned, stick a fork or knife into the loaf to be certain it comes out clean. This means it is done. Turn off the oven.
Pour the lemon juice and sugar mix over the loaf being careful not to let it overflow the pan and let it sit in the oven to set.
